Pretzel Salad (The sugar/gluten free alternative)

So…I discovered Pretzel Salad at a Christmas party this past year and attempted the healthy version for Easter…Seriously, SO good!  I know what you are thinking…Pretzel salad? Like potato or macaroni salad? Ewe…But No, It’s a dessert and dang good!  Enjoy!

PS) Compare this to the original recipe which has 45g of Fat and 750 Calories per serving!

First layer:

  • 2 cups crushed gluten free pretzels (about 100 Glutino brand pretzels)
  • 2 TBSP Spray Butter
  • ¼ cup Splenda

Second layer:

  • 1 oz package of fat free cream cheese
  • 1 cup Spelnda
  • 2 cups sugar free cool whip
  •  

Third layer:

  • 1 (6 oz) package of sugar free strawberry jell-o
  • 2 cups boiling water
  • 1 (10 oz) package of frozen strawberries
  •  

Preheat oven to 400°. Put first layer in a 9x13x2-inch pan. Bake 8 minutes. Remove to cool.

Second Layer - Beat Splenda into fat free cream cheese, stir in sugar free whipped topping. Spread over cooled pretzels.  Third Layer - Mix gelatin, boiling water and strawberries together and set aside 10 minutes. Pour over cheese mixture; chill thoroughly. Makes 8 servings.

Per Serving: 175 Calories, 8g Fat, 25g Carbs, 9g Protein, 408mg Sodium

Asparagus

Due to many inquiries, I thought I’d add the best way I’ve found to cook asparagus…Asparagus is awesome!  It rids the body of toxins due to its natural diuretic properties, is low in calories, low in carbs, full of vitamins and is high in protein. And…did you know asparagus contains a unique antioxidant called glutathione!?  Glutathione helps produce a quasi-hormone messenger called prostaglandins, which, in turn, influences muscle growth… So eat up!! :)

One cup has only 27 calories, 5g total carbs, 3g of fiber,  zero fat, and 3g of protein! 

Preheat your oven to 400 degrees, rinse off your asparagus and snap off the ends, spray cookie sheet with Pam (butter flavored) cooking spray, spread asparagus on cookie sheet, spray asparagus with Pam cooking spray then sprinkle lemon pepper, Basil and Herb Mrs. Dash and a bit of pepper…bake for 10 minutes!
