This past Sunday I made us some blueberry coconut flour pancakes… sometimes cooking with coconut flour or other gluten free flours can be tricky, but these turned out great… so thought I would share
This recipe makes 8 good size pancakes, with just about 72 calories, 5 grams of carbs , 5 grams of protein & 4 grams of fiber per pancake! Enjoy!!!
INGREDIENTS:
*1/2 cup coconut flour (I order mine from Blue Mountain Organics)
*1 cup unsweetened Almond Milk
*4 eggs
*1 tsp baking soda
*1/2 tsp sea salt
Optional..add 2 tsp vanilla extract, cinnamon, 1/4-1/2 tsp liquid stevia to taste, fresh or frozen blueberries, ect
First mix the milk, eggs, liquid stevia and vanilla extract in a small bowl then mix the sea salt, baking soda, cinnamon and coconut flour in medium size bowl. Combine the liquid slowly to the medium bowl and let sit for a minute.
FYI: These pancakes take a tad bit longer to cook.
Cook on a greased frying pan (I greased mine with a bit of coconut oil) for about 2-3 minutes per side on medium heat…
Finally…top with a bit of agave, maple syrup, coconut oil, ghee, nut butter, ect….

so do you just have to “experiment” with the other flours to see how things turn out? b/c it’s notjust as easy as replacing a recipe that calls for regular flour w/ other GF flours, right? looks yummy! make them, freeze them , send ‘em out!
